Illinois sheriffs selling cookbooks for charity
The Illinois Sheriff's Association has compiled a cookbook to be sold as a charity
to benefit Sudden Infant Death Services of Illiniois Inc. and Special Olympics of
Illinois.
All sheriffs in the association were invited to submit family recipes for the book
"Cuff 'Em and Stuff 'Em."
The 200-plus page cookbooks are being sold for $10. Half of the proceeds are going
toward printing costs and the other half is being divided equally between the two
charitable organizations.
The cookbooks are available through calling Saline County Central Dispatch at
252-8661 or by stopping in at the Saline County Sheriff's Office.
This recipe for chicken noodle soup was submitted by Saline County Sheriff Keith and
Nina Brown:
Chicken stock ingredients
3-4 chicken breasts
2 stalks celery, halved
1 large onion, halved
1 turnip, peeled and halved
1 carrot, scraped and halved
2 cloves of garlic
1 1/4 tsp. salt
3/4 tsp. tarragon
1/4 tsp. tarragon
4 c. water
3 c. chicken broth
Combine all stock ingredients in a large soup pot. Cook 45 minutes or until
vegetables are tender and chicken is cooked. Remove chicken, strain broth and
discard vegetables. Chop chicken, set aside. Return stock to pot.
Chicken noodle soup ingredients
4 c. dry noodles (more or less to taste)
1 lg. onion, chopped
2 stalks celery, chopped
2 carrots, scraped and chopped
1/2 tsp. salt
1/2 tsp. pepper
1/4 tsp. tarragon
Add chicken, cook until vegetables are cooked through and noodles are ready.
Hardin County Sheriff Tom and Suzy Seiner submitted this recipe for sweet potato in
pineapple rings:
2 c. cooked mashed sweet potatoes
2/3 c. brown sugar, packed
1/4 c. butter, melted
1/2 c. orange juice
1 tsp. pumpkin pie spice
1 tsp. orange peel
1/4 c. chopped pecans
1/2 c. raisins
1 No. 2 can of sliced pineapple miniature marshamallows
Combine sweet potatoes, brown sugar, butter, orange juice, spice, peel, pecans and
raisins. Mix well. Drain pineapple slices and place in baking dish. Mound 1/3 cup of
sweet potato mixture on top of each pineapple slice. Bake in 375 degree oven for 20
minutes. Top with marshmallows and bake 5 minutes longer. Makes 10 servings.
This recipe for Ozark apple puddin' was submitted by Pope County Sheriff A.J. and
Ida Sparks:
1 egg
3/4 c. sugar
2 T. flour
1 1/4 tsp. baking powder
1/8 tsp. salt
1 c. chopped nuts
1/2 c. chopped apples
1 tsp. vanilla
Beat egg and sugar together until smooth. Combine flour, baking powder and salt
together and stir into egg mixture. Add nuts, apples and vanilla. Bake in a greased
pie pan in moderate over (325 degrees) for 30 minutes. Serve with whipped cream or
ice cream.
