Beginner's Box: Sweet onion muffins
Don't let the name fool you. Sweet onion muffins may be flavored with sweet onions, but they actually are a savory bread.
Studded with onions and walnuts, these buttery muffins are a perfect accompaniment to cold-weather entrees. Serve them fresh from the oven with soup, stew and chili to round out a hearty meal.
SWEET ONION MUFFINS
1 1/2 cups all-purpose flour
1/2 cup sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt
2 eggs
1 cup finely chopped onion
1/2 cup butter, melted
1 1/2 cups chopped walnuts
Preheat oven to 400 degrees. In a bowl, combine flour, sugar, baking powder and salt. In another bowl, beat eggs, onion, and butter until blended; stir into dry ingredients just until blended. Fold in walnuts. Fill greased or paper-lined muffin cups three-fourths full. Bake for 20 to 25 minutes or until muffins test done. Cool for 5 minutes before removing from pan to wire racks. Yield: 12 muffins.
