Zucchini Appetizer Sticks

2 medium zucchini, ends removed

1 egg, beaten

1/4 cup fine, dry seasoned bread crumbs

1/4 cup grated Parmesan cheese

1/2 tsp. garlic powder

1/2 tsp. Original Blend Mrs. Dash

Cut zucchini into french fry-sized pieces and coat with egg. Mix crumbs, Parmesan cheese, garlic powder and Mrs. Dash in a 9 x 13-inch plastic food bag. Drop a handful of zucchini pieces into crumb mixture and shake to coat. Place on 2 large cookie sheets sprayed with nonstick spray. Do not overlap pieces. Continue coating small batches of zucchini with crumb mixture until all are coated. Bake in a preheated 450 degree oven for 15-20 minutes, until coating is browned and zucchini pieces are tender.

Roasted Garlic and Fava Bean Paté

1 16-ounce can fava beans

1 medium tomato, diced

2 - 3 cloves roasted garlic

1/4 cup onion, diced

1 tbsp. fresh parsley, chopped

Salt and pepper to taste

Press fava beans through a strainer to remove outer skins. Place in food processor and add tomato, roasted garlic, onion and parsley. Purée ingredients. Add salt and pepper to taste. Serve with warm, crusty bread.

Holiday Ham Balls from Sweden

3 cups buttermilk baking mix

10 1/2 cups smoked ham

1/2 cup Parmesan cheese

4 cups sharp cheddar cheese

2 tsp. spicy brown mustard

2 tsp. parsley flakes

2/3 tsp. milk

Heat oven to 350 Fahrenheit. Lightly grease jelly roll pan, 15 1/2 x 10 1/2 inch. Mix the baking mix, finely chopped, fully cooked ham, and the remaining ingredients thoroughly. Shape mixture into 1-inch balls. Place them about 2 inches apart in pan. Bake 20 to 25 minutes or until the color becomes brown. Immediately remove from pan. Serve warm.

Cheese Puff

5 slices of bread

Butter

Cream cheese

5 slices of bacon

15 toothpicks

Butter each slice. Spread cream cheese on each slice. Roll each slice. Slice each bread roll into 3 equal pieces. Cut each bacon slice into 3 equal pieces. Roll bacon around each bread roll. Spear with toothpick each bread roll. Place in preheated oven at 400 F for 15-20 minutes until bacon is crisp.
